For my dual BS - I took 15 credits per semester mostly in hospitality related classes and business management classes. My area of concentration for my food and beverage degree was in hospitality accounting and finance and revenue management. My concentration for my international business management degree was in human resource management and data analysis.

I was provided an extensive course curriculum in geology, hydrology, and the environmental sciences. Hands-on field trips were common including a geologic survey and extraction of rock and sand samples for the identification of radon source minerals on Long Island. Laboratory work included rock sample preparation, using a Franz Electromagnetic separator, and the use of heavy liquid separation methods. Waste Management included an assessment of Fishkills Landfill.
