Different atmosphere for each time I got certified or had to renew it. It's a full 8 hour 1st. day of learning to measure foods and sanitize your work area the proper way for state requirement. Also properly taking temperatures of the food, dishwasher, water for hand washing of pots and pans. Also need to know your temps for the rinse and sanitation water for three well sinks. The other day is to take the written/multiple choice test.
