If you are a chef or a cook it can be 14 hours or 15 hours with no over time.

0 tough to get shifts covered if you are sick, if you don't someone else loses a shift or gets put into a 3 person team, either way someone loses money because of team service. Instead of single service, you have strong servers who can handle the rush, and then seat the guests accordingly to the strength of the servers
