You need to get it out of your head that it is a privilege to work for Biltmore Company b/c the novelty wears off and once it does your employees are stuck with very low paying jobs that demand "gracious hospitality" 100% of the time and it is utterly exhausting! Your employees are one if not the number one reason your guest ratings are so high, you need to appreciate them A LOT more. Any "benefits" your employees get (such as On Track) is clearly a tax write off for you so ultimately it is a benefit for you. Most of employees are not stupid and they know for a fact that your family has worked extremely hard for generations to milk every conceivable tax loophole out there so do not kid yourself that your employees are unaware that they are just an expense you try desperately not to pay. No one faults you or your family for your shrewd tax loophole accounting but for God's sake pay your employees a respectable wage.
