I learned a lot at Island Creek Oyster Bar (ICOB, affectionately) but could not stay as I did not want a career in hospitality. The staff there are some of the best in the business because they have devoted their lives to pouring the perfect cocktail or describing how fiddleheads bring out the merroir in oysters. Does that clause make any sense? If not, then you are not a true waiter.
