JOB DESCRIPTION: Assistant Kitchen Manager

Iron Fish Distillery is Michigan’s first working farm solely dedicated to the practice of distilling small- batch craft spirits. Our family reclaimed a late 1890’s abandoned farmstead with a simple mission in mind: we create exceptional spirits from the ground up, growing our own grain and sourcing grain from Michigan farmers with practices that respect the health of nearby watersheds. Our true passion is to offer customers and guests the craft of soil-to-spirit distilling from a family business that cares about our employees, community and the living land.

Iron Fish Distillery is seeking a Assistant Kitchen Supervisor focused on supervising and coordinating all activities, in our scratch kitchen setting, related to procurement, preparation and delivery of good quality food and beverages to customers. Job duties include but are not limited to the following:

1. When the Kitchen Supervisor is unavailable, the Assistant Kitchen Manager will supervise and coordinate activities of food preparation, kitchen staff and purchases foodstuffs, cocktail ingredients, bar and kitchen supplies: Plans or participates in planning menus, preparing and apportioning foods, and utilizing food and beverage ingredients efficiently and effectively while seeking to achieve food and beverage costs goals.

2. When the Kitchen Supervisor is unavailable, the Assistant Kitchen Manager will supervise non cooking personnel, such as dishwashers or kitchen helpers, to ensure cleanliness of kitchen and equipment as well as safe operating procedures are observed. Ensures the adherence to HACCP and food safety guidelines.

3. Supervises cooks and tastes, smells, and observes food and cocktails to ensure conformance with recipes and appearance standards.

4. Supervises workers engaged in inventory, storage, and distribution of foodstuffs, cocktail ingredients and supplies.

5. Purchases foodstuffs, cocktail ingredients, bar/kitchen supplies, and equipment (subject to supervisor approval) using standard purchasing guidelines.

6. Provides input on hiring, performance feedback, goal setting and discharging employees.

7. Trains and coordinates training for new team members. Specifically the training of our J1 employees.

8. Costs out menu items and provides input on prices to be charged for food and cocktail offerings.

9. May meet with the Manager of Food, Beverage and Retail Operations and kitchen team members to resolve menu inconsistencies or to plan menus for special occasions.

10. Is the direct lead in the kitchen when the Kitchen Supervisor is unavailable or on leave. Job description and responsibilities may change based on the schedule of the Kitchen Supervisor.

11. Comply with all ServSafe certifications and MDARD standards.

12. Continue to implement new structures and procedures to ensure the facility is being run to the best of its ability.

Iron Fish Distillery is situated in a growing Northwest Michigan regional hub of agricultural destinations tied to local food, wine, mead and craft brewing producers, attracting people and organizations to the farm, tasting room and centennial barn. Our on-going, significant capital investments have increased production, barrel aging capacity and on-site food and beverage offering capabilities.

Iron Fish Distillery is Michigan’s first working farm, growing and sourcing local grain to distill a full line of small-batch craft spirits on a reclaimed 1890’s farmstead. Iron Fish does this from the ground up with practices that respect the health of nearby watersheds. Inspired by the Steelhead Trout that journey each year to their origin in the nearby Betsie River, Iron Fish is returning spirit to its origin using heritage methods of distilling on an environmentally third party verified farm growing non-GMO grain. Every step of the process is done by hand at the distillery.

Our facilities include our Tasting Room, Still Room, Barn Venue and HeadWaters event space that are all located on our farm, where growing grain and distilling spirit creates the backdrop for guests to enjoy and explore internationally awarded spirits, creatively crafted coupled with tasty cocktails and farm-to-table menu offerings. Our guests experience a warm inviting atmosphere where families, neighbors and friends travel out of their way and return with more friends to be part of the Iron Fish community.
