SUMMARY: Yocha Dehe Wintun Nation (Yocha Dehe or Tribe) is a federally recognized tribal government. The Tribe’s mission is to provide for the health and welfare of its people, to govern its own lands and affairs with sovereign independence and in a manner consistent with its cultural values, and to enhance and diversify its economy for the overall good of the nation. Yocha Dehe’s governing body, its elected Tribal Council, is charged with implementing this mission. As a federally recognized tribe, Yocha Dehe exercises a government-to-government relationship with the United States, as well as with the State of California and local governments, and the Tribe actively engages with outside agencies and officials, local stakeholders, and members of the public.
POSITION SUMMARY: The Demi Chef reports to the Executive Chef and is responsible for aligning individual dietary plans with creative menu creations and production of quality meals. Responsibilities include, but are not limited to, management of food preparation and cooking duties, logistics operations, managing an efficient kitchen, conducting inventory of food and kitchen supplies, ordering, processing, stocking, and sanitation. The Demi Chef must have the ability to creatively solve problems in a fluid environment. The right candidate will share our passion for food as well as educating our community.
ESSENTIAL DUTIES AND RESPONSIBILITIES:
To perform this job successfully, an individual must be able to perform each essential duty satisfactorily with or without reasonable accommodations.
· Creates custom dietary plans.
· Works with personal trainers, dietitians and other health professional resources to create custom meal preparation menus.
· Provides weekly custom meal preparation for Tribal citizens by using a thorough understanding of dietary needs and a creative use of flavors and skills.
· Develops recipes with the ability to tailor to school aged students.
· Creates and maintains seasonal vegetable side dishes for kid friendly menus.
· Investigates and resolves food quality issues including but not limited to ensuring food is prepared according to the correct recipe, served in the correct portion, and presented to be visually pleasing.
· Assists in providing daily meal preparation and delivery.
· Manages stock of essential accessible staple items.
· Completes weekly internal and external food item orders.
· Maintains food, supplies, kitchen, and stockroom inventory.
· Local produce shopping when necessary.
· Assists the Executive Chef to develop and facilitate individual and group instruction and hands-on classes.
· Schedules and ensures regularly scheduled physical inventories.
· Ensures freshness of all food products through proper product rotation.
· Assists Executive Chef with catering and offsite functions at the Olive Mill and Midtown Tasting Rooms.
· Continually evaluates the Tribal Culinary Program and recommends improvements.
· In collaboration with the Executive Chef, identify and present ideas for future goals, operational improvements, educational opportunities, and improvements to student nutrition curriculum.
· Performs other duties as assigned.
REQUIRED KNOWLEDGE AND EXPERIENCE

Education and Experience
High School Diploma, or equivalent; three years of high-volume catering experience and seven years of total culinary experience. Certificate or Associate’s degree (A.A.) in Culinary Arts, preferred; or equivalent combination of experience and education.
Additionally, the Demi Chef should have uncompromised sanitation and safety standards and the ability to:
- Coordinate resources in a high volume, time sensitive environment.
- Manage food ordering, processing, standards, and inventory.
- Demonstrate time management skills between student mealtimes and catered meetings with prep, cooking, cleaning, and deliveries.
- Be a self-motivated team player that prioritizes efficiency and collaborative interpersonal relationships.
Communication and Comprehension Skills
Must have excellent communication skills, including writing and proof-reading skills. Able to communicate effectively verbally and in written form. Able to maintain confidentiality and protect client rights. Excellent interpersonal skills both in person and by phone with a high degree of professionalism. Able to read and interpret documents such as safety rules, operations and maintenance instructions, and procedure manuals.
Mathematical Skills
Ability to calculate figures and amounts such as discounts, interest, commissions, proportions, percentages, area, circumference, and volume. Ability to apply concepts of basic algebra and geometry.
Reasoning Ability
Ability to apply common sense understanding to carry out instructions furnished in written, oral, or diagram form. Ability to deal with problems involving a few concrete variables in standardized situations.
Computer Skills
Must be proficient in Microsoft Office applications with the ability to use word processing, multimedia, email, spreadsheets, and database management software.
Certificates, Licenses, Registrations
Individuals must be able to successfully pass the Tribal Gaming Agency (TGA) Background Check. Possess a valid driver’s license and maintain a driving record that is satisfactory to the Tribe’s insurance carrier.
Physical Demands

While performing the duties of this job, the employee is regularly required to sit, use hands to finger, handle, or feel and reach with hands and arms, talk, hear, and smell. The employee is occasionally required to stand, walk; climb and stoop, kneel, crouch or crawl. The employee must frequently lift and/or move up to 50 pounds. Specific vision abilities required by this job include close vision, distance vision, color vision, peripheral vision, and ability to adjust focus.
Work Environment
You will be required to occasionally have exposure to moving mechanical parts and outdoor weather conditions. There is a moderate level of noise in this position which could be by the use of small electrical appliance noise; blender; garbage disposal; dishwasher.
Additional Conditions of Employment
Must be able to work with diverse population and with cultural sensitivity. Must be willing to sign the Tribe’s Non-Disclosure, Non-Disparagement and Confidentiality Agreement. Recognizes and maintains confidentiality.
