Porter
As a Porter at Machina Kitchen & ArtBar you are taking on the role of the dishwasher and cleaner in the kitchen. This means you will be responsible for keeping the Off-Stage Team stocked with everything they need to do their jobs and making sure that the On-Stage Team has all of the dishes and silverware that they need. This requires keeping an eye on the flow of service and planning ahead so that no specific type of dish runs too low. In addition to cleaning dishes and maintaining a clean and organized workstation, the Porter will often be asked to help with locating and bringing tools/dishes to fellow team members. Porters may also be trained in some prep projects and can expect to do these prep projects when their station is caught up and they have time. Just as Porters help the Cooks and Chefs with prep, the Cooks and Chefs will always help Porters with their duties as time allows. Every team member understands that all jobs are important and valuable, and so they do everything they can to support each other regardless of position.
As a member of the Off-Stage Team the Porter works primarily out of view of the guests, but it is important to understand that all team members at Machina are expected to appear clean and professional upon arrival to their shifts, and to maintain their appearance throughout. This is because our kitchen is visible to diners, and because Porters are often making quick trips On-Stage to put items away.
We understand everyone has bad days, but there is an expectation that a Porter can maintain a positive attitude during service. If you are having a bad day or need a mental health day, please communicate with the Chefs or the ownership team. Porters are expected to follow Machina’s dress and hygiene policies within our handbook and are expected to be active team members with good communication. The Porter reports direct to the Chefs and Sous Chefs but may be asked to take direction from the bar manager, lead server, and ownership team. Porters are expected to be able to lift 50 lbs and be on their feet for the entirety of their shifts.
