Job Overview
The Sous Chef position offers an exciting opportunity for an experienced individual to assist in the daily operations of a high-volume scratch kitchen. This role involves collaborating closely with the Executive Chef to ensure high-quality food production and overall kitchen efficiency.
Responsibilities
- Assist in planning and directing food preparation.
- Supervise kitchen staff, including line cooks and prep cooks.
- Ensure all kitchen operations run efficiently, including during peak hours.
- Oversee food preparation to ensure consistency and quality.
- Ensure that dishes are prepared according to recipes and presentation standards.
- Train kitchen staff in cooking techniques, safety procedures, and proper food handling.
- Monitor staff performance and provide constructive feedback.
- Manage staff schedules and ensure adequate staffing for shifts.
- Monitor food inventory levels and ensure the freshness and quality of ingredients.
- Maintain cleanliness and organization in the kitchen, ensuring compliance with health and safety standards.
- Conduct regular inspections of kitchen equipment and report maintenance needs.
- Ensure compliance with food safety and sanitation regulations.
- Promote a safe and clean work environment.
- Stay updated on industry regulations and implement any required changes.
Qualifications and Skills
- Proven experience as a sous chef or in a similar role in a professional kitchen.
- Strong understanding of various cooking techniques, recipes, and kitchen equipment.
- Leadership skills with the ability to manage kitchen staff and delegate tasks effectively.
- Excellent organizational skills and attention to detail.
- Knowledge of health and safety standards in food preparation.
- Ability to work well under pressure and in a fast-paced environment.
- Culinary degree or equivalent training preferred.
