Position Summary

Reporting to the Chef, collaborating with the Sous Chef and Lead Line Cook, the Line Cook for White Labs Brewing Co. – Asheville (WLBC) is responsible for delivering the highest quality to guests within WLBC specifications. This position will be working with fresh, high-quality ingredients from local farmers, executing a unique fermentation-focused menu with a strong pizza component, in a casual taproom environment. As a member of the BOH team, the Cook is responsible for maintaining consistency in food preparation, being a team player, and exhibiting positive and productive communication with other team members. This position can be full-time or part- time and works various shifts, depending on business needs.

Essential Functions and Duties

  • Ensures all menu items are prepared according to recipe and instructions, using proper cooking and plating procedures, and following all proper food handling techniques.
  • Sources fresh, high-quality ingredients from local farmers.
  • Places all orders for food on a daily basis to assure availability of all menu items at all times.
  • Works with Lead Line Cook, Sous Chef and Chef to maintain daily prep lists, opening and closing procedures, line checks and ordering.
  • Conducts daily station/line checks to ensure readiness for the shift and quality control.
  • Performs audits of FIFO in all food storage areas including checking of dates of all items and overall cleanliness.
  • Audits prep stations for proper portions (using scale when needed) and proper sizes of cut/prepped items.
  • Monitors all food handling throughout the shift to ensure adherence to all proper procedures and food safety guidelines, and quality of ingredients going out to the guests with minimal waste.
  • Holds kitchen to high standards of cleanliness and sanitation.
  • Safe handling of knives; safe and proper operation of all kitchen equipment.
  • Follows up on all cleaning procedures in order to maintain a work environment free from safety concerns/hazards.
  • Completes monthly food inventories with Lead Line Cook, Sous Chef and Chef.
  • Makes recommendations to Lead Line Cook, Sous Chef, Chef and General Manager on operational improvements.
  • Creates and maintains high-level culture of hospitality for both staff and guests.
  • Assists in executing private events.
  • Performs other related duties and projects as assigned.

Necessary Knowledge, Skills and Abilities

  • High school diploma or equivalent.
  • ServSafe certification (or ability to obtain within 2 weeks upon hire).
  • 2+ years of restaurant kitchen experience.
  • Excellent knowledge of food ingredients.
  • Solid foundation of cooking knowledge and techniques. Familiarity with international cuisines.
  • Understanding of beer, how beer is made, cooking with beer and pairing with beer.
  • Working knowledge of health, safety and sanitation procedures.
  • Experience with POS systems, Microsoft Word and Excel.
  • Excellent organizational, verbal communication and interpersonal skills.
  • Ability to work various shifts, including evenings, weekends and holidays.

Physical Demands

Works in fast-paced and high-volume restaurant setting. Noise level may be disruptive at times because of kitchen and customer seating areas. Requires standing and/or walking more than 75% of time. There may be lifting required of up to 50 pounds with frequent lifting of objects of up to 15 pounds.
